Transfer to a bowl and top with chopped scallions, almonds, lemon juice, olive oil and crumbled feta. Make a beetwich! Toast two slices of rustic bread. Place goat cheese, arugula and cooked beets on top of one of the slices of bread. Drizzle with olive oil and balsamic vinegar. Cover with the other slice of bread. Serve them with a creamy horseradish sauce in a tasty side dish. Roast (instructions above) with a clove of garlic, onions and fresh herbs like rosemary or thyme for a delicious infusion of flavors. Keep frozen. How to Prepare: Oven: Toss frozen beets with a little olive oil, salt and pepper. Place in a single layer on a pan and roast at 350 degrees F for 15-20 minutes. Microwave: Place frozen beets into a covered microwave-safe dish. Cook on high for three to four minutes. Microwave heating times may vary. Season to taste. Store at or below 0 degrees F (-18 degrees C). For food safety and best quality, cook to a temperature of 160 degrees F (71 degrees C). Cooking times may vary depending on power of microwave and type of container used. To return highest quality and texture, do not overcook.
